Ingredients

  • flour

  • whole wheat flour

  • baking powder

  • baking soda

  • salt

  • sugar

  • butter softened

  • eggs large

  • ripe bananas mashed

  • buttermilk

  • vanilla extract

  • pecans toasted and chopped

Directions

  • Preheat oven to 350°. Grease a 5 x 9 loaf pan.
  • Whisk together flour through salt.
  • Beat sugar and butter until light and fluffy. Add eggs and beat well. Add bananas, buttermilk and vanilla.
  • Reduce speed to low or stir in flour mixture. Stir in all but 2 tablespoons pecans. (optional)
  • Pour batter into loaf pan, top with remaining pecans. (optional)
  • Bake until toothpick inserted in center comes out clean, about 50-55 minutes (stoneware take about 15 minutes longer)
  • Cool for 10 minutes then remove from pan. Slice and serve.

Notes

  • This bread freezes well and is very good toasted.
