Ingredients
flour
whole wheat flour
baking powder
baking soda
salt
sugar
butter softened
eggs large
ripe bananas mashed
buttermilk
vanilla extract
pecans toasted and chopped
Directions
- Preheat oven to 350°. Grease a 5 x 9 loaf pan.
- Whisk together flour through salt.
- Beat sugar and butter until light and fluffy. Add eggs and beat well. Add bananas, buttermilk and vanilla.
- Reduce speed to low or stir in flour mixture. Stir in all but 2 tablespoons pecans. (optional)
- Pour batter into loaf pan, top with remaining pecans. (optional)
- Bake until toothpick inserted in center comes out clean, about 50-55 minutes (stoneware take about 15 minutes longer)
- Cool for 10 minutes then remove from pan. Slice and serve.
Notes
- This bread freezes well and is very good toasted.
