Ingredients
of bacon chopped
large eggs
whole milk
flour
butter
Cheddar Cheese sharp is best, shredded
Salt and pepper to taste
chives freshly chopped (optional)
Directions
- Preheat oven to 425.
- Cook bacon in a 10 inch cast iron pan over medium heat. Stir occasionally until bacon is cooked through and crispy. When done, remove pan from heat. Transfer bacon to drain on paper towels. Reserve 1 ½ tablespoons of bacon drippings in pan.
- While bacon is cooking, melt butter in a small saucepan over low heat. As soon as butter melts, turn off heat and add milk. Stir to warm milk slightly. Put this mixture plus the 3 eggs and flour into a blender. Process until smooth, about 30 seconds.
- Return skillet to medium heat. Heat for 1 min. Turn off burner and pur batter into skillet. Immediately transfer skillet to preheated oven. Bake until golden and puffy, about 18 minutes. Use light to check, don’t open the oven door.
- Remove skillet from oven and immediately sprinkle with grated cheese. Return to oven for 1-2 minutes or until cheese melts. Remove and sprinkle with bacon and chives. Serve immediately.
Notes
- Serves 4 with other stuff. Serves 2 if this is the main dish.
