Belgian Waffles

Servings depend on waffle iron. Makes about 12 squares (3 full waffles in my iron)n

Ingredients

  • all-purpose flour

  • baking powder

  • baking soda

  • salt

  • eggs large, separated

  • buttermilk or 1 ¾ cups milk and ¼ cup vinegar

  • cream of tartar optional

  • butter melted

  • vanilla extract

Directions

  • Heat waffle iron.
  • Whisk together first 4 ingredients in a large bowl. Whisk together egg yolks and buttermilk. Beat egg whites and cream of tartar at high speed with an electric mixer until stiff peaks form.
  • Stir yolk mixture into flour mixture until just moistened. Stir in butter and vanilla. Batter will be lumpy. Fold in egg white mixture. Do not overmix.
  • Brush oil on waffle iron. Use about ½ cup batter for each square.
