Ingredients
all-purpose flour
baking powder
baking soda
salt
eggs large, separated
buttermilk or 1 ¾ cups milk and ¼ cup vinegar
cream of tartar optional
butter melted
vanilla extract
Directions
- Heat waffle iron.
- Whisk together first 4 ingredients in a large bowl. Whisk together egg yolks and buttermilk. Beat egg whites and cream of tartar at high speed with an electric mixer until stiff peaks form.
- Stir yolk mixture into flour mixture until just moistened. Stir in butter and vanilla. Batter will be lumpy. Fold in egg white mixture. Do not overmix.
- Brush oil on waffle iron. Use about ½ cup batter for each square.
