Black Bean Burger

This is an easy recipe. Good for that one friend that decided to be vegetarian the day before showing up to your cookout.

Ingredients

  • can black beans rinsed and drained

  • tortilla chips crushed

  • salsa

  • cheddar cheese shredded

  • egg

  • scallion chopped

  • Salt and pepper to taste

  • Optional add-ins: Diced jalapeno, corn, diced bell pepper

Directions

  • Smash the beans until chunky. Stir together with rest of the ingredients. Form in to 4 smallish patties or 3 reasonable size patties.
  • Heat about a tablespoon of oil in a skillet over medium heat. Saute patties 4-5 minutes on one side. Add oil again, flip and saute about the same on the other side. Serve however you like burgers.

Notes

    Note: I couldn’t really taste the cheese in the burger. I added more on top. You could probably leave out completely.
